Our Story: From Bahía de Bolonia to the magic of fire
There are places where time seems to stand still, and Bolonia beach is one of them. Our story begins in the 1960s, when tourism was barely a whisper and this corner of Cadiz was the best-kept secret of local fishermen. Back then we opened our doors as Bahía de Bolonia, a refuge where the first travellers discovered what it means to dine while looking out over the Strait.
Today, decades later, that heritage evolves into Brasas de Baelo. With a passionate team at the heart of the house, we wanted to pay tribute to the most primal and honest element of cooking: fire.
The legacy of Baelo Claudia
We are not here by chance. Just a few metres from our tables lie the ancient Roman ruins of Baelo Claudia. More than two thousand years ago, the Romans already knew these waters held a treasure, turning this same shoreline into the capital of tuna and garum sauce. We carry that millenary legacy forward. Dining at Brasas de Baelo is, in a way, sitting at the same table as history.

At Brasas de Baelo, fire leads the way and the product speaks for itself. We do not stop at excellent meats; we master the embers to serve traditional sardine espetos, wild fish grilled from our own coast, the indispensable Cadiz-style fried fish, and rice dishes that taste of sea and tradition.
